Time: 4 hours
Quantity: 8 mantou.



Ingredients

  • 200g All-purpose flour
  • 200g Sugar
  • 2 tsp Active dry yeast
  • 1 tsp Baking powder

Recipe:

  1. Mix 45 grams of (warm) water with 20 grams of sugar
  2. Mix 45 grams of (warm) water with 2 grams (1 tsp) of yeast
  3. Mix 200g of AP flour with 1 tsp of baking powder
  4. Add both of the water mixtures to the dough.
  5. Knead for ~8 minutes.
  6. Cover and let rest for 30 minutes.
  7. Flatten dough, and roll through the widest setting of a pasta maker ~8 times. (this is to remove air)
  8. Roll up to a ~25cm log.
  9. Flour, and cut into eighths (after snipping off the ends).
  10. Place each mantou on parchment paper and into a steamer.
  11. Proof for 15 minutes.
  12. Turn heat on, and once obviously steaming, steam for 5 minutes.
  13. Let sit for 5 minutes before taking them out.
